Just created a custom datatype, but it seems there is no way to set it in Studio ? I was genuinely expecting it to be found in the dropdown list of ‘type’ field, would be so natural.

Normally, all custom datatypes are appended to the end of the Type dropdown list in Studio, usually on the next “page” of it:
Make sure you have registered new datatypes in metadata.xml, and if the problem still exists, provide us with a small sample project to solve it.
